This dish was created to commemorate Napolean's victory at Marengo.
Ingredients
6-8 chicken pieces
1 tbsp oil
1 tbsp butter
2 cloves garlic
1 bouquet garni
1 c white wine
1/4 c brandy
2 large tomatoes, peeled and quartered
12 mushrooms
chopped parsley
salt and pepper
flour
Method
Sprinkle chicken with salt, pepper and coat lightly with flour.
Heat oil and butter in a pan and brown chicken over high heat, till
golden on all sides.
Transfer to a casserole and add garlic, bouquet garni, white wine, brandy and tomatoes.
Cover casserole tightly and cook gently for 30 minutes, turning pieces
several times. Add mushrooms and cook till chicken is tender.
Adjust seasoning and discard bouquet garni. Sprinkle with chopped parsley.
