Ingredients
2 tbsp olive oil
1 clove garlic, finely chopped
12 oz mix of red, yellow cherry tomatoes
4 scallions, thinly sliced
1/4 cup pine nuts or chopped hazelnuts, toasted
2 tbsp chopped fresh basil plus herbs to garnish
1 tbsp balsamic vinegar or red-wine vinegar
freshly ground pepper
Method
Heat a wok until hot. Add oil and swirl to coat wok. Add garlic and tomatoes and stir-fry 2 minutes.
Add onions, nuts, basil and vinegar. Stir-fry 1 minute or until tomato skins crinkle. Season, garnish and serve immediately.
