Ingredients
225g fresh bean sprouts, washed, husks discarded
1 small red pepper, cored, deseeded and thinly shredded
2 tbsp oil
salt and pepper to taste
2 1/2 c water
1 tbsp soya sauce
1 tbsp lemon juice
1 spring onion finely chopped
Method
Heat a wok. Add oil and wait for it to smoke. Add bean sprouts, red pepper and stir. Add soya sauce, lemon juice, salt, pepper and water.
When soup starts to boil, garnish with spring onion and serve hot.
