Ingredients
12 oz white or light green cabbage, finely shredded
6 oz carrots finely grated
5 pineapple slices drained or 1 (8-oz) fresh pineapple, chopped
1 eating apple, cored, chopped
2 tsp lemon juice
1/4 c raisins
1/4 c chopped apricots
mayonnaise
1 tsp honey
salt and pepper
Method
Put cabbage into a large bowl. Toss apples in lemon juice and add to the cabbage along with raisins, pineapple, carrots and apricots.
To make the dressing, mix mayonnaise, honey, salt and pepper in a bowl.
Pour over the salad. Mix well, then turn into a serving dish. Serve at once.
