Ingredients
4 cucumbers, peeled, seeded
1 c buttermilk
1/2 c plain yoghurt
salt and pepper to taste
1 1/2 tbsp finely chopped mint
cucumber slices and mint sprigs for garnish
Method
Chop 3 cucumbers, place in a blender with buttermilk and yoghurt and process until smooth. Add salt and pepper to taste.
Finely dice the remaining cucumber. Add to soup with mint. Cover and chill.
Serve in chilled bowls, garnishing each with cucumber slice and mint sprig.
