Ingredients
1/4 c olive oil
1/4 c white-wine vinegar
1/4 c tarragon vinegar
2/3 c white grape juice
2 tsp chopped fresh mixed herbs, such as parsley, thyme, mint, rosemary
2 tsp whole-grain mustard
1 pinch of sugar
salt and pepper
Method
Into a bowl, put olive oil, vinegars, grape juice, herbs, mustard, sugar, salt, and pepper. Beat ingredients together until thoroughly mixed.
Alternatively, put all ingredients in a clean jelly jar. Screw top on jar and shake until ingredients are thoroughly mixed.
Adjust seasoning before serving. Serve with a fresh mixed salad or a selection of raw or cooked vegetables.
Makes 1 cup.
