Lemon Vinaigrette

Ingredients

3/4 c olive oil
3 tbsp lemon juice
1/2 tsp finely grated lemon zest
1 tsp honey (optional)
1 clove garlic, crushed
2 tbsp chopped mixed herbs
salt and pepper

Method

Put all the ingredients in a screw-topped jar. Shake well to blend before using.

Makes 1 cup.
