Mushroom Soup

Ingredients

3 tbsp butter
1 large onion sliced
6 cups sliced mushrooms
1/2 tsp grated nutmeg
1 tbsp flour
2 c vegetable stock
1 1/4 c yoghurt

Method

Heat butter in a pan. Cook onions till soft but not brown. Add mushrooms and cook for 2 minutes.

Add nutmeg, flour and stir. Add stock. Bring to a boil and simmer 5 minutes.

Stir in yoghurt and warm through.
