Ingredients
1 kg honey dew or watermelon
1 tbsp chopped mint
1 red onion, thinly sliced
3 tbsp lemon vinaigrette
Method
Remove seeds from melon and slice the wedges diagonally.
Place in a bowl and sprinkle with mint.
Mix onion and dressing together in another bowl and leave for 1 hour stirring occasionally.
Mix in melon and transfer to a serving bowl.
