Ingredients
3/4 lb carrots
3 tbsp peanut oil
1/2 tsp sesame oil
1 tsp grated peeled ginger
1 clove garlic (small), sliced
1 dried red chili, seeded, crushed
2 tbsp lemon juice
1 tsp sugar
1/3 c peanuts, toasted, chopped
salt and pepper
cilantro leaves, to garnish
Method
Into a large bowl, finely grate carrot.
In a skillet, heat 1 tablespoon of the peanut oil and the sesame oil. Add ginger, garlic and chili; cook until just turning golden. Beat in remaining oil, lemon juice and sugar. Remove from heat.
Pour dressing over carrots. Add nuts and toss well until evenly combined. Cover and let marinate 30 minutes. Stir again, season to taste and serve garnished with cilantro leaves.
