Ingredients
8 radishes, cut into roses or fans
2 whole chicken breasts, cooked, skinned, boned
3 c fresh bean sprouts
4 oz fresh button mushrooms, stems trimmed, sliced
1 yellow bell pepper, seeded, diced
3 scallions, chopped
2 carrots, cut into thin julienne strips
1 recipe oriental dressing
1 tbsp sesame seeds, toasted
Method
Place radishes in a bowl of ice water to make them open. Meanwhile, shred chicken and place in a bowl with bean sprouts, mushrooms, bell pepper, scallions and carrots. Stir together.
Pour dressing over salad; toss to mix. Transfer salad to a serving dish; sprinkle with sesame seeds and garnish with radishes.
