Ingredients
3/4 cucumber
2 1/3 c strawberries
1 tsp pink peppercorns
mint leaves, to garnish
2 tbsp balsamic vinegar
1/4 c olive oil
salt
Method
To make dressing, mix together vinegar, olive oil and salt in a large bowl. Slice cucumber very thinly, using a mandoline or slicing disc on a food processor.
Put cucumber slices into bowl with dressing and mix gently to coat. Slice strawberries. Arrange a circle of overlapping slices of cucumber on serving plates.
Arrange strawberry slices in a circle inside cucumber, then arrange remaining cucumber slices inside strawberries. Place remaining strawberries in center. Lightly crush peppercorns and sprinkle over salads. Using scissors, snip mint leaves over salads and serve at once.
