Steamed Suger Snap Peas With Lemon and Ginger
Yeild: 20 Servings
INGREDIENTS:
Stringless Suger Snap Peas - 4 lbs. -
Lemon juice, strained - 1 cup -
Lemon rind, grated - 2 tsp. -
Soy Sauce - 1/4 cup
Ginger, Powdered - 2 tspn.
-Combine in large bowl. Mix Well. Cover and chill for one hour.
Place in large metal colander.*
Chicken Stock - 2 quts. - Heat to a boil in a pot just large
enough to hold colander. If necessary, place colander on top of
inverted bowl to keep sugar snap peas well above the liquid.
Cover pot. Cook over high heat until sugar snap peas are well
heated.
*Note: If desired,
place in steamer pan and cook just until sugar snap peas are well
heated.
