Tofu French Toast

prep time: about 10-15 min.
serves: 1 (but you can always easily double,triple, etc. the recipe)

You need:

  • 2 pieces of bread (I like wheat, but anything goes.)
  • some soft tofu; I don't usually measure; but I guess it would be about 1/4 c
  • soy milk, maybe 1/4 c or more
  • cinnamon-- about 1/4 tsp.
  • Sucanat (or othe sugar if you don't have that) either 1/4 or 1/2 tsp.
  • vegan margarine (oil would also work)
  • maple syrup or fruit

    First, put tofu in a food processor (blender also works, but one when you're only making for one, i find this is easier). Add some soy milk and blend it up til smooth. Add more soy milk if needed. Then add your cinnamon & Sucanat (you could also try a little nutmeg here too). Then put some margarine on your pan and heat it up over medium. Take a piece of bread & get it covered on both sides w/ your tofu-soy milk mix. Then put one side down on the pan and cook for about 2 min. or until brown. (if you pan is big enough, you can do both pieces at one.) Then turn over and brown the other side. Repeat w/ other slice. Then top w/ syrup, fruit, whatever. yum.
