These are adult oriented cookies, but the Rum is optional, so you can substitute either 1/4 teaspoon of rum extract for the rum - or add no rum flavour at all to make them kid friendly. (But we are not responsible for the pirate impersonations that will follow if you omit the rum "Why is the Rum gone?...")
Ingredients (makes 30 cookies)
- 10 tablespoons unsalted butter (at room temperature)
- 1/2 cup brown sugar
- 1/3 cup pure almond butter
- 1 egg white
- 1/2 teaspoon vanilla extract
- 2 tablespoons Jamaican Rum
- 1 1/2 cups flour
- 1/4 teaspoon salt
- 30 whole almonds
Instructions for Almond Butter Cookies
Preheat oven to 350 degrees Fahrenheit.
Cream butter and sugar together in a large bowl. Beat in almond butter, egg white, vanilla and rum. Sift in flour and salt. Stir until the dough is soft and smooth.
Roll cookies into small balls with your hands and place on parchment-lined cookie sheet. Press one whole almond into the center of each cookie.
Bake at 350 degrees F for 13 minutes until edges just begin to turn golden brown. Transfer to rack to cool.
