We use Kamut Flake cereal for this recipe. It's best if the flakes are somewhat crushed - the bigger pieces tend to stick out and get a bit burnt - still tasty, but doesn't look very appealing.

Ingredients (makes 12 muffins)

  • 1 cup flour
  • 1/3 cup brown sugar, firmly packed
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup apple
  • 3/4 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 cups kamut flake cereal

Instructions for Apple Kamut Muffins

Preheat oven to 400 degrees F. Grease muffin pans.

Combine flour, sugar, baking powder, salt, cinnamon and nutmeg together in a large bowl.

Peel the apple and chop finely.

Mix apple into dry ingredients.

Combine milk, vegetable oil, and egg in small bowl.

Pour liquids into solids and stir gently until just combined.

Add kamut flakes. Mix gently.

Spoon into muffin pans.

Bake at 400 degrees F for 15 minutes or until toothpick inserted comes out clean.
