Use a bread machine to make the dough for this foccacia. These instructions are for a bread machine used in Vancouver, Canada... according to the instructions that came with the machine geographical location makes a big difference in how bread turns out. Ingredients (makes 1 foccacia)
- 1 cup water
- 4 tablespoons olive oil
- 3 teaspoons sugar
- 1 teaspoon salt
- 3 cups flour
- 2 teaspoons (or 1 package) yeast
- 15 pieces dried tomato
- olive oil to drizzle on top
- coarse salt to spread on top
- mexican oregano to spread on top
- pepper to spread on top
Instructions for Bread Machine Foccacia
In this order: Add water, olive oil, sugar, salt, flour, and yeast to the baking pan of your bread machine.
Run the dough setting.
Soak the dried tomato pieces in a small amount of water for about 10 minutes. Discard water.
When the add ingredients beep sounds for the bread machine add the tomato pieces. Let machine run for another couple of minutes then stop the machine and remove dough.
Place dough on parchment lined baking sheet. Lightly oil your hands with olive oil. Pull and press dough across the baking sheet to form a large flattened circle. Vigorously poke dimples into the foccacia with your fingers. Drizzle with olive oil. Spread coarse salt, oregano, and pepper on top.
Let the dough rise on the baking sheet for about 30 minutes. Preheat oven to 400 degrees.
Bake at 400 degrees F for 10 to 15 minutes until top is golden and the center is still soft.
