This is an interesting twist on hummus, the addition of cashews and mint makes this hummus a nutty fresh treat.
Ingredients (serves 3-4 as a dip with pita chips)
- 1/4 cup canola oil
- 1 inch piece of ginger thinly sliced
- 1 19 fluid oz. (540 mL) can chickpeas (also called garbanzo beans)
- 1/4 cup cashews, roasted
- juice of 1 lime
- 2 cloves garlic
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cracked pepper
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon tumeric
- 1/4 teaspoon cinnamon
- 2 tablespoons chopped cilantro
- 2 tablespoons chopped mint
Instructions for Cashew Mint Hummus
In a small saucepan heat the oil and ginger for 10 minutes on low heat.
Blend all ingredients in a food processor to desired consistency.
