Not an easy thing to do... pancakes for only 2! This recipe should guide you through. Don't forget to use real Canadian Maple Syrup on top when serving too!
Ingredients (makes 6 pancakes)
- 1 cup flour
- 1 teaspoon baking powder
- 1 tablespoon sugar
- pinch of salt
- 1 cup milk
- 1 egg
- 1 tablespoon vegetable oil

Preheat oven to a very low temperature to keep completed pancakes on a plate in a slightly heated oven while making the rest.
Sift together flour, baking powder, sugar and salt into a medium bowl.
Beat together milk, egg and vegetable oil. Use a large measuring cup for this which will be useful for pouring the pancake mixture later.
Add the wet ingredients to the dry ingredients all at once. Mix to combine, but don't over mix, small lumps in the batter are just fine. Pour mixture into the measuring cup for easy pouring into the frying pan.
Heat a frying pan over medium heat. Pour a bit of the mixture into the frying pan. The first pancake typically takes longer to cook than subsequent pancakes. Flip pancake over when most of the bubbles on the top have popped. Remove from pan when pancake is light brown on both sides. Put on plate in oven to keep warm while cooking more pancakes.
