Banana and strawberry - a sweet combination. We recommend local strawberries - ones that grow where you live taste the best!
Ingredients (makes 12 muffins)
- 2 or 3 ripe bananas (about 2/3 cup)
- 2 egg whites
- 1/3 cup sugar
- 1/2 cup milk
- 2 tablespoons vegetable oil
- 2 teaspoons vanilla
- 2 cups flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 cup strawberries, cut into pieces
Instructions for Strawberry Banana Muffins
Preheat oven to 350 degrees F. Grease muffin pans.
Peel and squish bananas into a puree with a fork in a small bowl.
Whisk egg whites and sugar together in large bowl. Blend in milk, vegetable oil and vanilla.
Combine flour, baking powder, salt and cinnamon in a medium bowl.
Alternate adding bananas and dry ingredients to the sugar and egg mixture. Mix well between additions.
Add strawberries and mix until just covered.
Spoon into muffin pans.
Bake at 350 degrees F for 25 minutes or until toothpick inserted comes out clean.
Let muffins cool in pans for 15 minutes before attempting to remove them from the pans.
