What to do when apricots are in season, and you have a lot of them! Warning: this can be quite tart if you get lemons with attitude, so take it easy on the lemon juice. This is a modified version of a recipe from the TV show Sugar. For more great recipes, see the foodtv.ca web site.
Ingredients (serves 4)
- 12 fresh apricots
- 3 tablespoons butter, melted
- 1/4 cup plus 2 tablespoons sugar
- 1 tablespoon lemon juice
- 1/4 cup honey
- 2 vanilla beans
Instructions for Vanilla Roasted Apricots
Preheat oven to 375 degrees F.
Wash, halve and pit apricots.
Toss apricots with melted butter in a small bowl. Add 2 tablespoons sugar. Ensure sugar coats apricots well. Pour into baking dish.
Blend 1/4 cup sugar, honey and lemon juice in a small saucepan to make syrup. Scrape seeds from vanilla beans into pan - place the bean pods in as well. Heat on medium just until sugar dissolves.
Pour sugar, honey and lemon syrup over apricots. Include vanilla beans.
Roast in oven at 375 degrees F for 20-25 minutes. While roasting, baste apricots with syrup but agitate fruit as little as possible.
Serve warm.
