Not an easy thing to do... waffles for only 2! This recipe should guide you through. Don't forget to use real Canadian Maple Syrup on top when serving too! We have successfully halved this recipe down to making only 5 waffles - or you can make 10 waffles and freeze 5 for later toasting.
Ingredients (makes 5 waffles)
- 1 cup flour
- 1/2 tablespoon sugar
- 1 1/2 tablespoon baking powder
- 1/4 teaspoon salt
- 2 eggs, well beaten
- 1 cup milk
- 1/4 cup butter, melted

Instructions for Waffles
Preheat oven to a very low temperature to keep completed waffles on a plate in a slightly heated oven while making the rest.
Preheat waffle maker. We use a 2 waffle capacity electric waffle maker.
Sift together flour, sugar, baking powder and salt in medium bowl.
Beat eggs, milk and butter together in a small bowl.
Add the wet ingredients to the dry ingredients all at once. Mix to combine, but don't over mix, small lumps in the batter are just fine.
Spoon mixture onto waffle maker using a soup ladle. One spoonful should make one waffle.
Waffles are done when steam stops billowing from waffle maker.
