This recipe is still under investigation & is subject to serious revision. I have hunted down some most interesting recipes for savory crackers and mixed and matched the ingredients and instructions from them. I think this recipe may need more butter, and the honey addition is problematical for even mixing.
Ingredients (makes 20 crackers)
- 1 cup whole wheat flour
- 1 teaspoon cornmeal
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 2 tablespoons cold butter
- 1 teaspoon honey
- 1/4 cup to 1/2 cup water (a bit more if mixture is too dry)
- ground pepper
- ground dry ancho powder
Instructions for Whole Wheat Crackers
Mix together flour, cornmeal, sugar, salt, and baking powder.
Cut in the butter. Add the water and honey and mix until a dry dough forms. Depending on the humidity in the air, you may need to add more or less water, so start with 1/4 cup and add more if needed. You may want to pour the mixture onto a cutting board to work in the water with your hands.
Wrap in cling-wrap and refrigerate for at least an hour.
Preheat oven to 375 degrees F. Line baking sheets with parchment paper.
On a very lightly floured surface Roll dough out very thinly - about 3mm or 1/8 inch or less. Cut into crackers. Using a serated wheel is best, cookie cutters leave a lot of waste around the edges, which can be rerolled and cut again, but this dough does not do well with a lot of handling.
Transfer crackers to baking sheets. Sprinkle ground pepper and ground ancho on top of the crackers. Bake for 17-18 minutes until edges are slightly brown. Cool completely before eating.
