May's recipe
-- Shore Lunch Fish Fry |

2-3 pounds fish fillets,
any
kind you have caught
1 teaspoon salt
1/4 teaspoon pepper
1 egg
1 tablespoon water
1 cup flour
1/2 cup yellow cornmeal
Shortening |
Other
food items
Potatoes about 3-4 lbs
Vegetables of your choice
Salt
Pepper
Beverages
Bread and butter or margarine |

1 large cast iron frying pan
1 medium cast iron frying pan
steel campfire cooking grill
1 - 3 quart covered pot for veggies
fire starter |
Spatula
Large fork
Paper towels
Plate, cups and utensils for everyone
Plastic food bags |

Directions |

At home or camp place the flour and cornmeal in
a sturdy plastic container. Place the egg in a cut down egg carton
or carry in a plastic jar in the cooler. At the shore lunch site,
get the fire going, set up the grill, then prepare potatoes and
veggies. Next fillet the fish and sprinkle both sides with salt
and pepper. Add the water to the egg and beat until well
blended. Put the egg in a plastic bag and coat the fillets with
egg. Place the fillets in the other bag with the flour and
cornmeal mixture, shake until coated. Fry the fish in the
large pan until golden brown on both sides about ten minutes. Fry
the potatoes in the medium pan and heat the veggies in the covered
pot. Serve hot with bread, butter and your choice of
beverage. Adjust the amount for the number of people in your
group.
