COCONUT SWEET BREAD
Traditional Trinidadian recipe from Savi on FYN 
Makes one 8" square cake
1 dry coconut (grated)
1 cup brown sugar
1 1/2 cup flour
2 tsp baking powder (heaped)
2 tsp vanilla essence (or rum)
1 cup milk
1 tsp nutmeg
4 oz (1/4 lb) soft butter
Raisins
(Add sufficient water at the end to make consistency like cake mixture)
* Mix coconut, flour, baking powder and sugar together
* Add milk and butter and mix well
* Add vanilla, nutmeg and raisins
* Add water to make into consistency of cake mixture
* Let rest 15 minutes in baking dish
* Bake in moderate oven (325) 45 minutes or less
* Test with knife for thorough cooking
