Some day I would like to be able to open my own Catering / Party Planning Buisness. I enjoy cooking very much and I would love to be able to cook all day long (and have someone else clean up the mess). I have planned quite a few parties including:

Train Party at a Miniture Train Park for my son's 2nd Birthday.

My Wedding
This takes a whole page of its own, but could be very helpful to a Wedding Planner

Bunco Party (once sometimes twice a year)
mostly we play Bunco which is a dice game with 12 people
but we always have food,
decorations,
a Bunco Prize (Kinda like a door prize)
and Dessert (YUMMY)

Here are a few of my favorite recipes. I will try to change these periodically so you can always come here to find something new.

New recipies as of 04/23/00

 

Best-Ever Cinnamon Rolls
4 1/2 to 5 cups all purpose flour
1 package active dry yeast
1 cup milk
1/3 cup butter or margarine
1/3 cup granulated sugar
1/2 teaspoon salt
3 eggs
1 tablespoon half & half or light cream

FILLING
3/4 cup packed brown sugar
1/4 cup all purpose flour
1 tablespoon ground cinnamom
1/2 cup butter or margarine
1/2 cup light raisins
1/2 cup chopped pecans or walnuts

ICING
2 cups sifted powdered sugar
2 tablespoons milk (or more if needed)
1/4 teaspoon vanilla

Rolls: Heat and stir milk, butter, sugar & salt just till warm (120 to 130 degrees) Add it to the mixture of the flour and the yeast. Add eggs. Beat with electric mixer on low speed for 30 seconds, scraping the sides of the bowl constantly. beat in high speed for 3 minutes. stir in as much of the remaining flour as you can.

On a lightly floured surface, kneed enough of the remaining flour to make a moderately soft dough that is smooth and elastic (3 to 5 minutes total). Shape the dough into a ball. Place dough into a lightly greased bowl, turning once to grease surface of the dough. Cover and let rise in warm place until double (about 1 hour).

Punch dough down on a lightly floured surface. Cover and let rest for 10 minutes. Roll the dough into a 12 inch square

Mix together filling ingediants except for raisins and nuts. (cutting in the butter, not melting it) so it is crumbly. Sprinkle over rolled out dough. Then sprinkle raisins and nuts over that. Roll up , jelly-roll style. Slice roll into 8 one inch pieces. Arange pieces in a greased deep dish pan (pizza pan or baking dish) sides touching. Cover with oiled waxed paper, then with plastic wrap, and refrigarate for 2 to 24 hours.

Uncover and et stand at room temperature about 30 minutes. Punture any surface bubbleswith greased wooden tooth pick. Brush dough with half and half. Bake at 375 for 25 to 30 minuter or till golden brown. Brush again with half & half and cool for 1 minute. Invert rolls on a wire rack. Cool slightly. Invert again onto serving platter.

Mix together icing and drizzle over rolls YUMMY YUM YUM !!!.

 

Bean Salad
1/2 cup cooked beans (chickpeas & kidney)
1/2 cup steamed green beans
1/4 cup chopped red onion
2 tablespoons olive oil
4 tablespoons garlic seasoned rice vinegar

Mix everthing together and store in covered container in the fridge overnight.

 

Yummy Fruit Salad

As you can tell this is just a mixture of my favorite fruits. Fresh strawberries, Grapes and Bananas. I just wash and slice them and sprinkle sugar on them. and eat um all up.

 

Mock Creme Brulee
1 package (4 oz) vanilla pudding and pie filling (the kind that you cook)
1/2 cup chilled whipping cream
1/2 cup packed brown sugar

Cook pudding as directed on package. Press plastic wrap on top of pudding; cool to room temperature. Stir pudding once or twice.

In chilled bowl beat cream until stiff. Fold into pudding. Pour into 6 inch ungreased pie pan. (or individual glass custard cups if you like.) Sprinkle brown sugar evenly over pudding.

Set oven to broil or 550 degrees, Broil pudding at 5 inches from heat about 1 minute or until sugar melts and begins to carmelize. Chill at least 2 hours.

 

Ham & Cheese Sandwich Bake
2 cups Bisquick
1 cup milk
2 tablespoons mustard
1 egg
1 package (6 oz) thinly sliced, fully cooked lean ham, chopped
1 cup shredded cheddar cheese (aprox 4 oz)

Mix Bisquick, milk mustard & egg until blended. Pour half of the batter into a 8 inch square greased baking dish. Top with half of the ham and then half of the cheese and then the rest of the ham. Pour remaining batter over ham.

Bake 45 to 50 minutes or until golden brown an set. Sprinkle with remaining 1/2 cup of cheese. Let stand 5 minutes before cutting.
