Awesome Chicken5 lb chicken parts (skinned) (2.5kg)1 can frozen orange juice 1 small jar (approx 1 cup) red current jelly (250 ml) 3 cloves garlic, minced 1 tsp hot mustard (5 ml) 2 tbsp. minced (canned) horseradish (30 ml) 3 tbsp Worcestershire sauce (45 ml) 1/2 tsp salt (7 ml) Rinse and pat chicken; set in crock pot. In a medium-sized saucepan, add all remaining ingredients. Stir over medium heat until jelly is totally dissolved and mixture comes to a boil. Remove from heat and pour over chicken. Cover pot. Set crock pot on highest setting for 3 hours (or on medium to low for the day -up to 8 hours). Serve over rice.
Sue's Greek Shrimp-Salad-In-A-PitaDRESSING1 Tbsp No-Fat or Low-Fat Mayonnaise3 Tsp Red Wine Vinager 1/2 cup lime juice 1 clove garlic (crushed) 1 tsp Greek Seasoning or "Spike" Salt & Pepper to Taste
FILLING1 cup chopped English cucumber1 cup chopped tomatoes 2 Tbsp crumbled Feta Cheese 1 lb cooked shrimp, peeled and deveined 6 6" Pita Pockets 6 leaves Lettuce Combine ingredients and toss with dressing. Split open the pitas, insert a lettuce leaf and stuff with Greek Shrimp Salad.
