Mother's Chocolate Cake

Okay, here's the recipe you've all been e-mailing me for. Let everyone you know, around the world, taste this most AWESOME cake!
2/3 cup margarine
2 cups sugar
1/4 cup cocoa
1 cup boiling water

Combine these ingredients in a large mixing bowl, until margarine has melted. Then add 2 cups flour.

Beat until combined. Then add 1/2 cup sour milk (you can add lemon juice or vinegar to milk to sour it)
1 3/4 tsp baking soda
2 eggs (unbeaten)
2 tsp vanilla (I often substitute brandy flavoring)

Pour into rectangular baking dish (ll x 13) and bake at 350 degrees for approximately 1/2 hour, or until toothpick inserted in center comes out clean. **Please note** This cake almost ALWAYS falls in the center!That's the best piece. It's just like fudge!!

Frost the cake with a Chocolate Butter Icing. I don't use a recipe for this, but basically it is:

1/2 cup softened margarine
2 - 3 cups icing sugar
1/3 cup cocoa
2 tablespoons milk, or enough to get the right consistency
1 teaspoon brandy flavoring

Cream 2 cups icing sugar, 1/3 cup cocoa with 1/2 cup margarine. Slowly add 2 tbsp milk, vanilla or brandy extract, and additional cup of icing sugar. Mix until smooth and creamy. Frost the cake once it has cooled, and serve to your best friends!
