This is the way for me to always have new recipes on this page. I like recipes that are simple to prepare and for sure good to the taste. BEANS

• 1 pound non cooked white beans
• Wash beans in cold water • Cover dish and boil slowly for about 20 to 30 min till you see small skins going off the beans
• Empty water

• 1 diced onion • 2 tsp. salt • 1/4 tsp black pepper • ½ tsp powder mustard
• 2 to 4 tbsp (to taste) maple sirup or molasses

• When the beans are done boiling, pour all the ingredients together in a stoneware dish • Add boiling water to cover
• Cover dish and cook in the oven

• Oven temperature : 250 F • Cooking time : 7 to 8 hours

This is a traditional recipe in Quιbec. Most of the time we eat it on Sunday morning as our breakfast alone or with bread. For a bigger breakfast they are a great accompaniment with eggs and bacon, ham or sausage and pancakes. I changed the original recipe that is made with salted pork. The taste is exactly the same and they are more healthy. But I add one teaspoon of natural oil on top of each plate before serving...

3 BEAN HOT DISH

(Maybe it should be 4 Beans Hot Dish now that Kathy added the Butter Beans)

• 2 can of Pork & Beans ( 31 oz.) • 1 can drained Kidney Beans (15 oz.)
• 1 can drained Lima Beans ( 15 oz.) • 1 can drained Butter Beans (15 oz.)
Pour in a large oven cooking pan

Brown together the following:
• ½ Pound bacon (drain fat) • ½ Pound lean hamburger

Add the following to the two last ingredients :
• 3 tbsp. vinegar • ½ cup brown sugar • ½ cup catsup • 1 onion (chopped) • 1 tsp. dry mustard
•Cook & pour over the beans

• Oven temperature : 350 F • Cooking time : 45 min.

That great recipe was given to me by Kathy, my sister-in-law and very good friend. This is a traditional recipe from our husbands' mother and grand-mother. *S*

BBQ PORK CHOPS

• 6 pork chops • 1 large onion in slices
In an oven dish, in oil brown pork chops and onions

• 1 tbsp. Worcestershire sauce • 2 tbsp. vinegar • 3/4 cup ketchup • 1/4 tsp red pepper • 1 tsp brown sugar • 1 cup hot water
• Stir these ingredients to make a sauce • Pour sauce over pork chops • Cover dish and cook in the oven • Often baste during cooking

• Oven temperature : 350 F • Cooking time : 1 ½ hour or more

Try those pork chops... you can cut them with your fork and the taste yummy!!! Pierrette, is one of my best friends from Quιbec, she always make great dinner when she invites us to her home!!!

BOURGUIGNON BEEF

• 2 pounds beef stew meet • Salt and pepper to the taste • 1 can of beef broth • 1 glass dry red wine • 1 cup fresh mushroom
• Flour seasoned with salt and pepper
• In a plastic bag shake beef in salt and pepper seasoned flour • Brown beef on all sides in margarine • Add the beef broth
• Add wine and cook till beef is tender • Fry mushroom in margarine or butter and add it to the recipe 5 min before the end of cooking

(Mamie Cιcile's recipe, she was my mother in law and my friend and one of the best cook for making meat!!!

CRUZ'S COLESLAW

• 1 head of cabbage (3 lb) finely grated • 1/4 cup diced carrots • 2 tbsp. finely diced onion • ½ cup sugar • 1 tsp salt
• ½ cup sour cream • ½ cup mayonnaise • 2 tbsp white vinegar • 2 tbsp vegetable oil

• Mix cabbage, carrots, onion, sugar, salt and set aside • Combine all other ingredients in another container. Then toss with cabbage mixture • Chill at least 1 hour before serving • Don't add more onion than what it calls for as it is overpowering
• I don't even use the salt at all. I also use the FAT FREE sour cream and Mayonnaise • You can add ½ cup of milk if it seems too dry
You can use this recipe for macaroni and potato salad too

Recipe from Kathy

FONDUE CHINOISE or "Chinese Fondu"(Broth)

This recipe is a broth in which you cook your meat in a special "Fondue cookware" that is set in the middle of the table. You can use beef cut in cubes or very thin slices of beef. Sometimes we use chicken or seafood or a mix of all those meats. Fondues are very popular in Quebec. We make them for special dinners. My sons just love it so we were not always waiting a special day *S*. It is so pleasant to sit around the table with friends, enjoying a good conversation and taking two or three hours for eating

• 1 chopped onion • 2 garlic cloves
• Lightly brown in margarine

• 1 can beef broth • 1 can water •1 cup chicken broth • 2 tbsp chili sauce • 2 bay leaves • 1/8 tsp oregano • Black pepper, parsley, celery salt
• Add those ingredients to the onions • Cook slowly for one hour • Add a glass of red wine into the broth, 10 min before the meal is ready • Pour in the fondue cookware that is sitting in the middle of the table and cook your meat and vegetables into it
• Serve with your choice of the "special Fondue sauces" at the bottom of the basics fondues recipes.

Fondue Terre et Mer

Equal quantity beef and sea food cut in pieces. Cook to taste


Fondue Bourguignonne

In your Fondue cooking dish, replace the broth with peanut oil


Here are few sauce recipes to eat with these different fondues. I usually prepare 3 or 4 sauce for the same fondue meal


Sauce du Diable or "Devil Sauce"

• 3 minced garlic cloves • 1 finely chopped onion • 1/4 cup oil • 1 tbsp. Corn starch • 2 tbsp. Vinegar • ½ cup ketchup
• ½ tsp. Salt • 2 tbsp. Worcestershire sauce • 1 tsp. Dry mustard

• Slightly cook onion and garlic in oil • Add corn starch and stir • Add vinegar, ketchup and Worcestershire sauce
• Take to boil • Add the rest of the ingredients
Serve with the fondue meat


Curry sauce

• In a pan, melt 3 tbsp. Butter or margarine • Add 1/4 cup finely chopped onion and 3/4 cup peeled and apple cut in dices • Fry until tender • Slowly add 2 tbsp. Flour and 1 tbsp. Curry powder • Mix • Slowly add, 1 cup warm milk, ½ tsp. Salt and 2 tbsp. Peanut butter
Cook at a low temperature


Mustard Cream Sauce

• Whip ½ cup cream • Add 1 tbsp. Mustard, salt and pepper to taste
Place in refrigerator till serving


Sauce Bιarnaise or "Bearnaise Sauce"

In a stoneware bowl mix :
• 2 egg yolks • 1 tbsp. Tarragon vinegar • 2 tbsp. Fresh cream • 1/8 tsp. Red pepper

• Put the bowl below in a cookware that contain warm water, put it on a soft heat • Whip until ingredients begin to be thicker
• Add 4 tbsp. Butter, 1 spoon at a time • Then, add 1 tsp. Fresh minced Tarragon, chives and parsley • Stir till well mixed
Serve lukewarm


Spicy Sauce

Mix : • ½ cup mayonnaise • ½ cup ketchup • 1 tsp. Worcestershire sauce • 1 tsp. Lemon juice
• 1 tsp or 2 Tabasco (if you do not like too much spice, put less) • ½ tsp. Salt • ½ tsp. Black pepper
• ½ tsp. Pulverized onion • 1 tbsp. Chopped parsley
Serve cold


Tomato Sauce (1)

1 cup ketchup • 1 grated carrots • 1 garlic clove • 1 tsp. Tabasco • 2 tsp. Worcestershire sauce • 2 tbsp. Vinegar
• 2 tbsp. Butter or margarine
Simmer for about 5 minutes


Tomato Sauce (2)

Mix :
• ½ cup sour creme • 2 tbsp. Chili sauce • ½ tsp prepared "Horseradish" • 1/4 tsp. Sel • 1/8 tsp. Black pepper
Refrigerate (Give 2/3 cup)


Tartar Sauce

• 1 cup sour creme • 2 chopped green onions • 2 tbsp. chopped dill pickles • 2 tbsp. chopped parsley
• 1/4 cup chopped stuffed olives • 1 tsp. Salt • 1/8 tsp. White pepper
Refrigerate till serving

Mayonnaise Chili Sauce

• 4 tbsp. Mayonnaise • 1 tbsp. Chili sauce
Mix and refrigerate till serving

Garlic Butter

• 1 cup butter or margarine • 4 to 5 crushed garlic cloves • 1 drop lemon juice
• Little of chervil, parsley and chopped green onion (facultative)


Herb Butter

• 1 cup butter or margarine • 1 tbsp. lemon juice • Chopped green onions • Parsley, Tarragon, Rosemary, sage
Mix in a blender


Paprika Butter

• 1 cup butter or margarine • 2 tbsp. Onions • 1 tbsp. Paprika
Serve on your choice of vegetables

LASAGNA

• 2 Italian tomatoes 28 oz each • 1 Can tomato paste 5 ½ on. • 2 tsp salt • 1/8 tsp black pepper • 1 Bay leaf
• Pour ingredients in a thick cooking pan • Simmer at least one hour

• 2 pounds lean ground beef • 1/4 cup oil • 1 cup diced onions • 1 diced garlic clove • 2 tsp dried parsley
• 1 tsp oregano and basil
• Brown onions garlic and meat in the oil • Add spices and herbs, salt and pepper to taste

• 1 package of lasagna or less • 3/4 pound Mozzarella cheese in slices • 1 pound your choice (Romano or cheddar)
• ½ cup Parmesan grated cheese
• In a large oven casserole dish, pour 1 ½ cup of the first preparation • Put orderly : lasagna, cheese, meat preparation • Repeat it and finish on top with lasagna and the sauce • Garnish with Parmesan cheese

• Oven : 350 F • Cooking time : 30 a 40 min

PATΙ ΐ LA VIANDE QUΙBΙCOIS or "QUΙBΙCOIS' MEAT PIE

• 2 tbsp butter or margarine • 1 small onion • ½ pound lean ground porc • ½ pound ground beef • 3/4 cup water • 2 tbsp dry parsley • 1 ½ tsp salt • ½ tsp cinnamon • 1/8 tsp black pepper • 1/8 tsp all spices

• Melt the butter • Brown the onion • Add the meat and cook till brown • Add other ingredients and cook slowly about 1 hour Put it aside till cold • Pour in a non cooked crust and cover with an other crust

• Oven temp. : 375 F • Cooking time : 30 to 40 min

PANCAKES

• 1 cup all purpose flour • 1/4 tsp salt • 2 eggs • 1 cup milk • Oil (to cover the bottom of the frying pan)

• Mix flour and salt • Add eggs and stir lightly • Gradually add milk • Fry in oil on a medium high speed, till pancakes cooked on the two sides • If you want crispier pancake, add more oil to cook them

PEACH MEAT BALLS

• 2 pounds ground beef • 2 tsp salt • 1/4 tsp pepper • 1/4 tsp cinnamon • Chopped onions to taste • Celery salt (optional)
• Make small balls and brown in margarine or butter • Put in an oven dish

• 1 can peaches in light syrup

• 1 cup chili sauce • 1 tsp lemon juice • 3 oz (or less) brown sugar • ½ cup prepared mustard • 3/4 cup juice of the peaches • 2 tsp soya sauce
• Heat the sauce and pour on meat balls • Decorate with peaches around the dish • Cook in the oven

• Oven temperature : 325 F • Cooking time : 1 hour or more

This is an other very good recipe from Pierrette!

SALMON LOAF


• 1 beaten egg • 1/4 cup milk • ½ tsp salt • 1/8 tsp black pepper • 3 tbsp chili sauce • 2 cup salmon
• 1 ½ cup bread crumbs • 1/4 cup sliced stuff olives • 1 tbsp lemon juice
• Stir well all the ingredients • Put in a greased oven pan • Put the pan in a bigger pan that contain water

• Oven temperature : 350 F • Cooking time : 50 min
Or micro-wave cooking : • Medium high : 15 min • Standing time : 5 min.
This salmon loaf can be frozen

CABBAGE ROLLS

• 1 ½ Pound ground beef • ½ Cup finely chopped onions • 2 ½ Tsp salt • 1/4 Tsp black pepper
• ½ Cup beef broth (optional)
• Stir and roll the meat in many cigar forms

• 1 Cabbage
Cook in boiling water for about 5 min. Roll the meat into each leaf

• 1 Can tomato 19 on • 1 Can tomato juice • Concentrated beef base (to taste)
• Add to cabbage and meat preparation

• Oven temperature : 325 F • Cooking time : 2 hours or more

This is the recipe that my mother was making and each time we were enjoying it so much. She was making so many good things for us. I still can remember the good smell of her cooking when I was coming home after school... Sweet souvenirs to me, sometimes in my life I was wishing that I could go back in time *S*
