SQUID in SAMBAL TUMIS
(Squid in a Spicy Sambal Sauce)
Ingredients:
100 g squid
30 dried chillies
2 medium onions
4 sq-cm belacan
1 cup thick tamarind juice, salt to taste
3 Tbsps sugar
Method:
- Grind chilli with onions and belacan. (Remove most of the seeds of the
chilli first).
- In a wok, heat 1 cup cooking oil
- Fry ground ingredients till fragrant and thick.
- Stir in salt, sugar and tamarind juice. Stir well.
- Add squids and cook till sambal thickens and oil oozes from sambal.
