CHICKEN IN SPICY GRAVY





Ingredients:
1 chicken, cleaned and cut into 4 parts
2 large onions, sliced into rings
1/2 cup cooking oil (peanut / corn oil)

Seasoning Ingredients:
Juice extracted from 8 limes
1/2 tsp white pepper
2 Tbsp light soya sauce
2 Tbsp sugar

Ingredients to be Ground in Blender with 1 cup water:
2-cm fresh turmeric
20 shallots
10 dried chillies
4 red chillies
A 2-cm cube of belacan (shrimp paste)

Method:
  1. Marinate chicken with the seasoning ingredients and let it stand for 1 hr.
  2. Heat oil in a saucepan / wok and stir fry the ground ingredients and sliced onions until fragrant.
  3. Add the marinated chicken and some water. (Not too much water because we don't want the gravy to be watery).
  4. Cook in medium heat until chicken is tender and the gravy thickens.
  5. Extra soya sauce and sugar may be added to taste.
