What's New:

Well, I have received very possitive feedback on the new design and layout. That makes this all worth while. I wanted my visitors to have easy navigation and a more uniform look. I have added quite a few more pages (check the what's new page for further details). Since I am adding things all the time now, I may have to re-arrange things a bit. But you will always find the navigation on the side to aid your journey. My thinking cap is on over-drive right now, so there will be a lot more essays and personal writings soon. Recipe Exchange:

Warm Taco Pie

Ingredients:
vegetable cooking spray
1 can refrigerated golden corn biscuits
3/4 lb. ground turkey
1 sm. onion (4 oz), chopped
1 lg. clove garlic, minced
1 2-oz. jalapeño chile pepper, seeded and minced
1 T. fresh cilantro, minced
2 t. paprika
1 t. ground cumin
1 t. crushed dried oregano
1/4 t. cayenne pepper
1/4 t. salt (optional)
freshly ground peper
1 15oz can low-sodium diced tomatoes in puree
1/4 c. shredded reduced-fat sharp cheddar cheese
2 lg. pitted black olives, thinly sliced
2 c. shredded lettuce
1 lg. plum tomato (3 oz), seeded and diced
1 sm. white onion (4 oz), diced

Instructions:
Preheat oven to 350. Lightly coat a 9-inch glass pie plate with cooking spray. Open the biscuits and place 3 uncooked biscuits in the bottom of the pie plate. Evenly space the remaining 5 biscuits on the bottom and sides of the pie plate. Using your fingers press the dough together to form a crust that completely covers the bottom and up the sides of the pie plate to form the rim.
Crumble the ground turkey into a large nonstick skillet and place over med. heat. Cook, stirring, until the turkey is browned. Drain off excess fat. Add onion, garlic, and chile pepper; continue to cook until onion is limp. Stir in herbs, spices, salt & pepper. Add tomatoes with their juice and continue to cook for 1 minute. Stir in shredded cheese and sliced olives.
Transfer mixture to the prepared pie plate and bake for 20 to 25 minutes, until biscuit dough is cooked through and richly browned and the filling is set. Remove from oven and let cool for ate least 15 minutes before cutting into wedges.
Place the lettuce in a serving bowl and combine the tomato and onion in another. Pass both bowls searately to serve with the taco pie.
Great for diabetics.6 Servings:
Per Serving: 370 calories (32% calories from fat), 22 g protein, 13 g total fat (3.3 g saturated fat), 42 g carbohydrate, 3 g dietary fiber, 42 mg cholesterol, 668 mg sodium.
Diabetic exchanged: 2 med. fat meat, 3 carbohydrate (2 1/2 bread/starch and 1 vegetable)

Predjudice
~~~~~~~~~~~~~~~~~~~

Low paying jobs, mortgage rates too high, gas prices too high, grocery bills almost doubled in price. These are just a few of the things in our daily lives which make it difficult to remain productive adults.

More and more people are finally starting to stand up for what they believe in and not live in the shadows. However, there are still people in society who believe we can still uphold the "Cleaver" image, therefore not accepting times have changed. Becuase of that, people and couples who happily live differently than the neighbors, are ridiculed as they walk out their front door.
The bad thing about this is, it's not even racial problems we need to worry about as much anymore ~ no ~ now they deem it necessary to go after two women or two men who are very much in love. What's worse than that? Merchants gladly take their money for goods and/or services, but let them try to sit at your table or teach your kids at school - even be your sons/daughters Scout Leader. Oh no, they just can't allow that!
Remember, these are just my personal opinions and feelings. I firmly agree everyone is entitled to their own beliefs and morals. But, I must add this: there are still certain aspects in different lifestyles I don't agree with ~ understand ~ but don't agree. The difference is ~ I don't need to put them down ~ especially publically. I try to live my life as honest and noble as I can, and I know there's people who don't agree with me ~ and that's okay too.
The best piece of advice I could give is an oldie but a goodie: Do unto others as you would have done to you. Before you go criticize another ~ attempt to wear their shoes for awhile. I bet in a short period of time you'll have a different opinion.
Look beyond the skin color ~ look beyond the gender ~ look beyond your personal beliefs. If someone has a genuine chance to be loved with freedom from abuse or neglect of any kind ~ be happy for them. Not everyone gets that lucky.
If the world is going to change ~ let it begin with us~

Ladies Of The Heart®. I would espeically like to thank Kari for starting such a great group! The corprate office is located right here in my home town ... how great is that?! Everday when I open my email, I can count on someone stopping by to say hi or signing in the guestbook. All of the ladies in the group are just awesome. The day I was introduced to the group my mailbox was overflowing in welcomes. Talk about feeling wanted *S*. Anyway, stop by and see what they have to offer. I guarantee you won't be sorry. So thanks to Kari and all the wonderful ladies.
