27. TEA MASALA (Chai Masala)

Ingredients

2 teaspoon cinnamon    
1 teaspoon peppercorns cloves dried ginger
½ teaspoon cardamom nutmeg  

 

Method

If using seeds, roast all the seeds in the oven or in a fry pan -  medium heat for 10 minutes.

Put all ingredients in a grinder (or use a mortar) and grind to a fine powder. Keep in a air-tight container.

Tea Masala is good with tea when you have a cold.

 

Masala Tea (Garam Chai) made the Indian way is as follows:

Gently boil 2 cups of water and 1 cup of milk in a pot with 3 teaspoons of tea leaves. Add 1 teaspoon of Tea Masala and sugar to taste. The tea is ready when it comes to the boil. You can vary the amount of milk to water to get thicker tea.
