Apple upside down cake

Ingredients:

6 tablespoons brown sugar

6 eggs

1/4 cup butter

1 and 1/2 cup flour (unbleached)

1 teaspoon vanilla extract

4-5 large apples, good for baking (Granny Smith, Rome Beauty, McIntosh etc)

whipped cream, 8 oz container (optional)

Directions:

Melt butter (leave a teaspoon of butter for greasing the pan) and remove it from heat. Separate egg whites. Mix brown sugar with egg yolks until smooth. Add vanilla extract, flour and butter. Grease an 8 x 11 in. cake pan with butter. Peel apples and remove their cores. Cut each apple into eight pieces. Place apple pieces in the greased pan so that they cover its bottom completely.

Whip egg whites until stiff and add them to the batter. Mix well but gently. Pour the batter into the pan. Bake in a preheated oven at 375 degrees for about 40 minutes or until golden brown. Invert on serving plate but allow about five minutes before removing the pan.

Best if served warm with whipped cream.

Makes about 12 servings.
