Catfish is a staple of the North Georgia Mountain folk. It can be found in channels, ponds, lakes and rivers. Most folks fry the fish. I prefer to toss them back into their watery homes. If we do happen to be unlucky enough to hook one and it is large enough, we lovingly give it away to someone. We do not like catfish. Catfish is something we put in our fish tank to help keep it clean.
However, for those of you who actually like catfish, here is a recipe.
Heat oil in large skillet (not over half full) until just under smoking. Drop two catfish at a time into bag
filled with corn meal, shake vigorously to coat fish, and slide catfish into oil one at a time. Cook on high until fish is golden brown, repeating until all fish are done. Drain well on paper towel. Serves six.
