Fried Rabbit

rabbit, flour, salt/pepper, cooking fat

Clean and dress rabbit, cut up. Roll in mixture of salt, pepper and flour. Heat fat. Put rabbit in pan and cook about 10 minutes. Add giblets. Turn often and cook until brown and tender, 30-35 minutes. Serves 3-4. *Note: Do NOT use PET and for goodness sakes, don't dress it in your favorite formal gown. It gets messy.

Broiled Squirrel

squirrel, salt, pepper, fat

Clean squirrel. Remove tail and head and feet. Hang tail and feet from living room wall. Throw head to the dog. Rub rest with salt and pepper. Place on broiling rack. Baste every ten minutes til done. Serves 2-3

Raccoon

Raccoon meat is dark and the fat is real strong flavored. I suggest not eating raccoon at all, however if you must, contact me for the recipe. I may or may not give it to you. Depends on if I have enough stomach left to write it.

Barbequed Opossum

This is a "favorite southern game animal".

opossum, skinned and cleaned. Barbeque sauce.

Cut opossum in half; place on rack and roast at 300 F about 2 hours. Baste frequently with sauce. yum yum yum

Beaver Tail

Roast over open flame until rough skin blisters. Remove from fire. When cool, peel off the skin. Cook over coals until tender. This is really a "dam" treat.

Baked Armadillo

armadillo, butter, onion salt, salt, pepper, lemon pepper

Season with peppers and salts and rub with butter. Wrap in foil and bake at 325 F for 45 minutes. Remove foil, add more butter and brown. *Note: Please please remove hard shell first. Bubba nearly broke his one tooth on it last time. But, hey I was just learning.

Well folks, if you're wondering how we get such luscious exotic meats, do what Bubba does. Get 'em while they're fresh. Wait on the highway with a shovel and sack and when one gets smooshed by a car or truck, scrape 'em up and mmmmmmmm, enjoy your meals.

Of course, you may want to follow suit and do what Bubba does after he eats dinner :)
