Ken's Squash Stuff - from Antiqkx2

Ingredients:

Peel squash, slice long ways, and cut out the seeds. Peel onion and cut into chunks. Seed peppers and cut into chunks. If a grater is available(preferably an electric one), run the 3 vegetables through the grater(coarse grind). If no grater is available (or you are too lazy to use a hand one --- me too) chop the veggies into VERY small chunks. Put veggies in large bowl. Add spices (again -- I NEVER measure anything, so don't ask). Let this stand for a few minutes -- until veggies start sweating. Add 1 or more beaten egg(s) and mix to coat all veggies. Add a mixture of flour(1/3) and cornmeal(2/3) and stir until mixture resembles a bowl of yuckie stuff (LOL --- bear with me this REALLY turns out good). You want the mixture to be only slightly runny. Using LARGE spoon, spoon the mixture into a hot BUT not toooooo hot skillet (Use oil, or pam) and form into 3-4 inch patties. Fry until brown on both sides.

This is a recipe I made up one summer when we had a rather overabundant supply of squash and peppers. The patties freeze rather well, and if you take them up before they get too brown -- you can finish the browning as they are thawing in the skillet. We froze alot of the patties that year and could not hardly tell the difference from the freshly made ones. Enjoy.......
As far as calories or fat goes --- I'm 5'9" and 145 pounds. The wife is 5'2" and around 100 pounds.Do we look like we care. Fat content is what you make it, if you like greasy --- then make them greasy. Diet is just like everything else --- take it in moderation and everything will be all right.

add all inggredients except milk and bacon to a 3 qt pot, cover 2 inch above ingredients with water, bring to boil , turn heat down to simmer and simmer until potatoes are very well done, almost mushy add milk and bacon and simmer for 15-20 minutes- serve with french bread or rolls.

Mix all ingredients and place in large casserole dish. Cover. Bake for 1 hour.
Comments:
Cooked product may be packaged in baggies and frozen. Partially
thaw and reheat with a little oil in in a fying pan. Uncle Ben's rice is a bit more expensive, but turns out nicer.
