Black Bean Dip

This recipe, supplied by the Henry Ford Health Organization, comes from the HeartSmart II Cookbook.

Ingredients:

1 can (15 oz) black beans, rinsed & drained
Vegetable oil cooking spray
1/2 cup chopped onion
2 garlic cloves, minced
1/2 cup diced tomatoes
1/3 cup mild picante sauce
1/2 tsp ground cumin
1/2 tsp chili powder
1/4 cup chopped fresh cilantro
1 Tblsp lime juice

Place the black beans in a small bowl and partially smash until chunky, set aside. Spray a nonstick skillet with the cooking spray. Add onion and garlic, saute for four minutes, or until tender. Add the beans, tomatoes, picante sauce, cumin and chili powder, cook for five minutes or until thickened, stirring constantly. Remove from heat, stir in the cilantro and lime juice. Serve warm or at room temperature with fat free chips.
