Spiced Beef Kabobs

Ingredients:

1 pound flank steak
1 large green peppers, cut into large pieces
4 tomatoes, cut into wedges
2 cups beef broth
1/2 cup frozen orange juice concentrate, preverably one with pulp
3 Tblsp soy sauce
1 medium onion sliced
2 cloves garlic, crushed
1 Tblsp Ethiopean spice mix (see main recipe index)

Combine the broth, orange juice, soy sauce, onion, garlic and spices in a large non-reactive bowl. Slice the beef into thin section and add the the marinade mixture. Allow to marinate for at least 8 hours or over night.

Thread sliced beef onto skewers, alternating with pieces of green pepper and tomato. If using a two layer grill, grill the kabobs until done then transfer to the upper level to keep warm, while cooking the next batch. Serve hot.

Alternately, the beef can be pan fried as follows. Heat 1/4 cup olive oil in a large non-reactive skillet. Add 1/4 tsp of sesame seeds and heat until seeds darken slightly. Add the beef, and onions from the marinade and stir fry until nearly done. Then add in slices of green pepper and tomato. Cover and continue cooking for about 3 - 5 minutes, stirring occasionally. Serve hot.
