Stuffed Zucchini Boats

Ingredients:

1 pound lean ground beef
1 large onion, chopped
3 cups cubed french bread
1 10oz package frozen, chopped spinach, thawed and squeezed dry
1/2 cup minced fresh parsley
1/2 cup tomatoe sauce
1/2 cup shredded parmesan cheese
1 egg beaten
1 tsp salt
1/2 tsp dried thyme
6 medium zucchini 1 cup water

In a large skillet cook the beef and onion over medium heat. When meat is browned, drain off grease and then stir in bread cubes, spinach, parsley, tomatoe sauce, parmesan cheese, egg, salt, thyme and set aside.

Cut each zucchini in half lengthwise and scoop out the seeds, leaving a 1/4 inch shell. Spoon about 6 Tblsp of the beef mixture into each zucchini balf. Place in 2 ungreased 13 in x 9 in x 2in baking dishes. Pour 1/2 cup water into each dish. Cover and bake at 350F for 30 minutes. Uncover and bake another 10 minutes, or until zucchini is tender.
