Tossed Spinich Salad

Ingredients:

1 half pound fresh spinach leaves
1 medium red onion
2 stalks celery, thinly sliced
2 large carrrots, shredded
2 cups sliced button mushrooms
1 small red bell pepper, thinly sliced
2 hard boiled eggs, thinly sliced, optional

Wash, blot dry, then de-stem the spinach. In a large bowl, combine all the ingredients and toss to mix. If desired, arrange additional peppers and sliced egg on top for a decerative effect. Serve with dressing of choice or Hot Bacon Dressing.
