2 tbs. oil
1 (4-ounce) can tomatoe paste
2 medium onions
1 bottle of ale
1 large green pepper
1 tbs. cummin
2 Jalapeno peppers
2 tbs. chili powder
4 cloves of garlic
1 tsp. oregano
3 lbs. ground beef
1 tsp. cayenne
2 cans pint beans
1/2 tsp. dry mustard
1 (26-ounce) can tomatoes
1/2 tsp. salt
lots of fresh ground pepper
Heat oil in a large stockpot.Add onions and peppers.Saute until cooked through but not browened,adding the garlic for the last minute or two.Add the ground beef and brown through.Drain off the fat.Add the remaining ingredients,stirring until combined.Bring the mixture to a boil and reduce the heat,cover,and let simmer for several hours,stirring occasionally,until the sauce thickens.Chili is best if cooked for a long time so add liquid if it starts to dry out.Serve with lots of crusty bread and lots of your favorite beer.
