QUICK CARROT
CAKE

A Moist Nicely Flavored Cake!
Try Topping It With Cream Cheese Frosting!


1 1/2 cup flour
1 tsp. baking powder
2 tsp. cinnimon
1 tsp. baking soda
1/2 tsp. salt
3/4 cup brown sugar
1/2 cup raisins
1/2 cup chopped nuts
2/3 cup vegtable oil
2 eggs
1 cup shredded carrots (firmly packed)
1 tsp. vanilla
1/2 cup crushed pineapple


Sift first 5 ingredents together.
Stir in sugar, raisins, & nuts.
Make a well in the dry ingredients.
Add all the wet ingredients.
Combine just till blended.
Pour into a greased & floured 8x8 pan.
Bake at 350° for 40 minutes.
