marilyn's coffee cake

batter
1   cup margarine or  butter
2   cups sugar
2   eggs or equivalent egg   
     substitute
1   cup low fat or regular
     sour cream       
1/2  tsp vanilla
2   cups flour
1    tsp baking powder
1/4 tsp salt
filling
1 cup nuts, chopped
2 tsp cinnamon
4 tsp sugar

  • Cream butter and sugar until fluffy.
  • Add eggs, one at a time, beating well after each addition.
  • Add  sour cream and vanilla.
  • Combine flour, baking powder, and salt. 
  • Add to first mixture.
  • Combine filling ingredients.
  • Grease and flour a bundt pan.
  • Spoon 1/3 of batter into prepared pan and top with 2/3 of the filling.  Repeat with remaining batter and filling.
  • Bake at 350 degrees for 55-60 minutes.
  • Cool for several minutes before
  • Inverting on serving platter.

two day kugel

12  oz no yolk noodles
1    cup light sour cream
1    lb nonfat cottage
      cheese                 
1/2 cup golden raisins
1     egg
1/2 cup egg substitute
1/2 cup sugar
2     cups skim milk
1      tsp vanilla

  • Cook noodles and drain.
  • Add sour cream, cottage cheese and raisins.  Spray a 9x13 inch baking pan with vegetable spray.
  • Place noodle mixture in pan.
  • Cover and refrigerate overnight.
  • Before baking, beat 1 egg and egg substitute.
  • Add sugar, milk, and vanilla.
  • Pour over noodles in pan.  Do not mix.
  • Bake at 375 degrees for 1 3/4 hours or until lightly browned.
