SCUNGILLI RECIPES INSALATA DI SCUNGILLI SCUNGILLI POMODORO SCUNGILLI ALLA NAPOLITANO INSALATA DI SCUNGILLI 1 lg. can of scungilli 1 sm. sliced onion 1 garlic clove - minced 1 stalk of celery - sliced 1 tomatoe cut into small wedges 10 small black olives (pitted) Lettuce 1/4 cup olive oil juice of 1/2 lemon dash of salt and pepper 1 tsp - parsley Place scungilli in mixing bowl/mix with onion, olives, celery, garlic and parsley - mix olive oil with lemon juice - make sure it's not too lemony - pour over scungilli and vegetables and toss well - line serving bowl with lettuce leaves - place scungilli in center and surround salad with tomatoe wedges. SCUNGILLI POMODORO 1 large can of scungilli 1 lg can of crushed tomatoes 1 sm. can of tomatoe sauce 1 small onion - chopped 2 cloves of garlic - crushed 1 small hot pepper 1/4 cup of olive oil Heat olive oil in sauce pan - saute hot pepper crushing it as it cooks/ add garlic and onions until onions are transluscent - add scungilli with liquor and cook about a minute or two/meanwhile puree tomatoes and tomatoe sauce/add to sauce pan and simmer about 30 minutes SCUNGILLI ALLA NAPOLITANO 1 can of scungilli olive oil 2 cloves of Garlic-crushed 1 tbl. of Capers 1/2 cup of Sun-dried tomatoes 6-7 green Olives-sliced 1 tbl. Parsely-chopped 1/4 cup of White wine 2 Anchovies fillets heat oil in a large skillet/saute garlic,capers,sundried tomatoes,and parsley until garlic is browned/add anchovie fillets and stir till anchovie dissolves/pour in wine,and simmer a minute or two/ Add scungilli and sliced olives. |
