These muffins are made with Mesa Sunrise cereal by Nature's Path. You could use any flake type cereal with this recipe but we especially like the corn, flax seeds, and other grains in the Mesa Sunrise cereal.

Ingredients (makes 12 muffins)

  • 2 cups Mesa Sunrise cereal
  • 3/4 cup brown sugar
  • 1/2 cup chopped toasted walnuts (optional)
  • 1 1/4 cup all purpose flour
  • 1 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup canola oil
  • 1 egg
  • 1 cup blueberries (fresh or frozen)

Instructions for Blueberry Mesa Sunrise Muffins

Preheat oven to 375 degrees F. Grease muffin pans.

Combine cereal, brown sugar, flour, baking soda, salt and walnuts in a large bowl.

Whisk milk, canola oil, and egg in a small bowl.

Pour liquids into solids and stir gently until just combined. Stir in blueberries.

Spoon into muffin pans.

Bake at 375 degrees F for 20 minutes or until toothpick inserted comes out clean.
