These waffles are great with Maple Syrup or with a tomato salsa! Sweet or savory, it's your choice!
Ingredients (makes 6 waffles)
- 1 1/4 cups all purpose flour
- 1/2 cup cornmeal
- 2 tablespoons sugar
- 1 tablespoon baking powder
- zest of 1 lemon
- 1/2 teaspoon salt
- 1 1/4 cups buttermilk
- 1/2 cup canola oil
- 2 eggs separated
Instructions for Lemon Cornmeal Waffles
Combine flour, cornmeal, sugar, baking powder, lemon zest, and salt in a medium bowl.
Whisk buttermilk, canola oil, and egg yolks in a small bowl. Whisk into dry ingredients and stir until just blended.
Whip egg whites to a soft peak. Fold into waffle batter.
Spoon mixture onto waffle maker using a soup ladle. One spoonful should make one waffle.
Waffles are done when steam stops billowing from waffle maker.
