These muffins may be spicier than you expect - but we love the smells and tastes of these hearty muffins. For an extra kick add a couple of spicey pumpkin seeds to the top of each muffin before baking (See the recipe for Spicy Pumpkin Seeds)

Ingredients (makes 12 muffins)

  • 1 1/2 cups flour
  • 1 cup rolled oats
  • 1/2 cup chopped toasted walnuts
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 3/4 cup milk
  • 1/3 cup peanut or vegetable oil
  • 1 egg

Instructions for Pumpkin Oatmeal Muffins

Preheat oven to 400 degrees F. Grease muffin pans.

Combine flour, rolled oats, walnuts, baking powder, baking soda, cinnamon, ginger (if using dried ginger), nutmeg and cloves in a medium bowl.

Whisk pumpkin puree, sugar, milk, peanut or vegetable oil, ginger (if using fresh ginger) and egg in a small bowl.

Pour liquids into solids and stir gently until just combined.

Spoon into muffin pans.

Bake at 400 degrees F for 20 minutes or until toothpick inserted comes out clean.
