Avocado and Smoked Salmon Timbale

(Kronendal Restaurant, Hout Bay)

This is a recipe for a starter from Kronendal Restaurant in Hout Bay. I first had a go at it when Nada and Geoff were coming for a dinner party.

Ingredients

3 ripe avocados

3-4 cloves of garlic

2ml Tabasco sauce or any other Chilli sauce

15-20ml lemon juice (fresh lemon)

salt (a pinch) and ground black pepper

30ml gelatine powder

40-50ml white wine

approx. 200g smoked salmon

some olive oil

Instructions

 

Purée avocados, garlic, Tabasco suace, lemon juice, salt and pepper.

Dissolve gelatine in hot white wine. Mix well into mixture.

 

 

Oil the moulds (6 to 8 moulds - e.g. in a muffin tray) with olive oil and line with salmon.

Fill the moulds with avocado mixture and leave to set in fridge for 1 to 2 hours.

Remove timbale from moulds and serve as a starter.

Right: Serving suggestion with brown bread and tomato.
