Summer Chicken Curry

This is a recipe for a curry mail dish which I have more or less thought of myself after having studies many other recipes for curry dishes. I had a go at it when Nada and Geoff were coming for a dinner party.

Ingredients

1 onion (chopped)

2-3 dessertspoons of mild curry powder or Masala

1 chicken (grilled or cooked - shredded)

1 lemon

half a cup of chicken stock

2-3 table spoons tomato paste

half a cup or a cup of chutney

half a cup of mayonnaise (or cream/yoghurt)

2 pineapples (or large tin of pineapple chunks)

3-4 bananas

rice and oil (olive oil)

Instructions

Fry chopped onion in oil.

Add curry powder, chicken, lemon juice, chicken stock, tomato paste and chutney (and perhaps a little garlic and ginger).

Simmer for about 10 minutes.

Cut pineapple into chunks and slice bananas. Add about half of the pineapple chunks and banana slices and simmer for another 5 to 10 minutes.

Mix in mayonnaise (or cream or yoghurt).

Serve in a large round dish, top and surround with the remaining chunks of pineapple and slices of banana (and perhaps garnish with some raisins.)

Serve rice (warm or cold) with it.

And I would suggest white wine with this dish.
